Sustained, persistent, delicate and fine, bubbles are synonymous with Champagne identity. Carrying with elegance the liveliness, the intensity and the joy of the wines, they are also the soft mirroring of the long ageing process in the cellars and a mastery of the terroir. Throughout the centuries, the champenois have learnt to observe, understand and master them in order to reveal their most endearing qualities.
Today, the champenois perfectly control the prise de mousse, yet the phenomenon remains complex and preserves part of its mystery…
